Happy Monday! Hope everyone had a good weekend! I started mine off with a trip to the movies to see “Gone Girl”, and all I can say is wow, just wow! You’ll just have to go see it for yourself . . . Saturday was spent with friends and their families as we took the kids horseback riding and played with some of the animals, I think everyone had a big time! Now it’s time to settle down and prep some things for the week! (Of course Sunday Funday wouldn’t have been complete without a barre class and Harry Potter movie marathon on TV)
I was cleaning out some things when I came across some fun recipes we had to create when we were interns. One of our first projects included developing a menu for a family of four who would need to prepare meals if stuck in a hurricane with no power. This project was a lot harder than expected when we had to develop meals that were well balanced and tasty; not just goldfish and pretzels. We were able to come up with some yummy recipes that are very easy to make, and store in situations where power and water are not available. My favorite thing we made were the “Coconut Oatmeal Energy Bites”; these little bites are packed full of your favorites and just two provide you with some quick energy. The best thing is you can make them on Sunday and store them for the week.
- 1 cup rolled oats
- 1/2 cup ground flax seed
- 2/3 cup coconut flakes
- 1/2 cup mini chocolate chips
- 1/2 cup peanut butter
- 1/3 cup honey
- 1 tspn vanilla
- Mix your dry ingredients: oats, flax seed, coconut, and chocolate chips. Then mix in your peanut butter, honey and vanilla.
- Use a spoon or scoop to make into 16 energy bite balls
They store best in a tightly sealed container you can open and eat throughout the week! Remember just two are the serving size (even though you’ll love the taste and want more!), but they are packed full of ingredients that will keep you fuller longer, making the perfect snack! I like them better than energy bars and you come out paying less in the long run.
