Grilling Out, Family Style

Hope everyone had a wonderful July 4th weekend spending time with family and friends! I worked through the holiday weekend but still had great time with family!

One night when I came home this past week, my mom had started preparing a summer feast in the kitchen. Naturally I jumped in to help and had a great time spending some quality time with my mom. She definitely knows her way around preparing a delicious dinner and I am so thankful I grew up learning from her. We had a wonderful time talking about our days and preparing the family dinner. Here are just a few things we prepared and their recipes!

Grilled Tilapia:

  • Tilapia (as many as you may need, 1 for yourself or 6 for the whole family)
  • 1 slice of lemon for each tilapia
  • 1 teaspoon Italian Mrs DASH seasoning per slice of fish
  • Salt and pepper to taste

Set the oven to preheat at 450 degrees. Season the fish with the Mrs DASH and salt and pepper, and then add the lemon slice on top before placing in the oven or on the grill. Cook for around 20 minutes or until fish is done.


Parmesan Crusted Zucchini

  • Zucchini, cut long ways 
  • 2 egg whites
  • 1/4 cup flour
  • 1/4 cup parmesan bread crumbs
  • 1/3 cup parmesan
  • 1 tblspoon olive oil

You will need three dishes to begin: Place flour in one, flat dish, separate from others. Then mix 2 egg whites until foamy in another. Your third dish should contain the bread crumbs, parmesan  and olive oil. Slice the zucchini long way, about 3 inches long, and coat in flour. Then place in the egg white mixture before coating in the bread crumbs. Preheat the oven to 450 degrees and place in the oven for around 15 minutes. A baking rack over a cookie sheet works best when cooking.

Sauteed Veggies

  • 2 Zucchini
  • 1/4 red onion
  • 1/4 cup sliced mushrooms
  • 1/2 Tblspoon Olive oil
  • 1 tspn garlic powder

Coat the vegetables in oil and garlic powder while pan is heating on the stove or grill. Place in pan and cook until golden brown. Enjoy! (You can really use any of your favorite vegetables!)
