New and Favorite

At least once a week, my best friend, Emily, and I get together for girls night where we cook a new or favorite recipe. Emily and I have known each other since middle school, roomed together at Clemson, and I could not ask for a better best friend! She is such a great person who is always there with advice and a shoulder to lean on. We could really write a book with all the adventures through college and this past year since graduating. Since my return from Florida, we have made it a weekly tradition to get together at least one night to cook and catch up on life.

Last night we got together and cooked a new recipe, paired with a favorite. We made Honey Glazed Salmon with Peach Salsa (new) paired with Veggie and Quinoa Salad (favorite), and our cocktail of the night was a frozen sangria. Delicious. (I put the recipes at the bottom of the post)

We had so much fun catching up and cooking together! Im so excited for her sister, who is graduating from high school this weekend, and starting her first year of college in the fall! So proud!

The family is now packed for The South Carolina High School Rodeo Finals! Jin competes this weekend and Dad is directing everyone in the arena. We always have a great time with our rodeo family, and everyone does a great job of pitching in. Katie would compete every year when she was in high school and she now coaches Jin, making it a team, family effort. It also happens to be in my favorite place, Clemson. So not only will we get quality family time, but I get to see some of my favorite people and catch up. Well the first wave has left, so this means that I have to finish washing clothes, pack my mom’s car, pack myself, fit in a run and some weights, and find time to check on everything around the place  so we can catch up with them this evening!

Girl’s Nights Recipes:

Honey Glazed Salmon:

  • 4 oz Salmon fillet
  • 1 Tblspn honey
  • 2 Tblspn olive oil

Coat both sides of the salmon with olive oil and honey. Place on baking sheet and place in oven at 400 degrees for around 15 to 20 minutes.

Peach Salsa: (Adapted from here)

  • 1/4 red pepper, diced
  • 1/4 yellow onion, diced
  • 2 peaches (large)
  • 1/4 cup chopped, fresh cilantro
  • 2 Tblspn lemon juice
  • 1 1/2 Tblspn Honey

Combine all the ingredients in a bowl and let sit in the refrigerator while preparing the rest of the meal.

Roasted Vegetable and Quinoa Salad: (Adapted from here)

  • Red peppers, sliced and chopped up
  • Red onions, sliced and chopped up
  • Zucchini, sliced
  • Yellow squash, sliced
  • 1 cup quinoa (makes around 4 to 6 servings so use more if needed)
  • Olive Oil (around 4 Tblspoons, 2 Tblspn for the veggies and 2 Tblspn for the quinoa)
  • Lemon Juice
  • Garlic Powder

Chop your veggies (and you can use different ones, whichever are your favorites) and coat in olive oil and garlic powder. Roast at 400 degrees for 30 minutes, stirring occasionally. Prepare your quinoa by adding 1 cup quinoa to 2 cups water and boil. Once the quinoa is done, add 2 Tblspn olive oil and Lemon juice of half a lemon and mix. Then combine with your roasted veggies.

Frozen Sangria: (Adapted from here)

  • 1 1/2 cup red wine (we used Pinot noir)
  • 1.5 oz rum (we used light rum, but the original calls for dark)
  • 1/4 cup orange juice
  • 3 slices of canned pineapple
  • 2 peaches
  • 2 Tblspn sugar
  • 1/8 teaspoon cinnamon

Combine all ingredients with ice in a blender, garnish with a lime wedge if you would like, and enjoy!!
